Good Morning friends and happy 1st day of August! Seriously, where is the year going? Where is summer going? I'm not ready for either to end yet! This month I plan on sharing tons of things with you, from back-to-school deals, beauty products and fall prepping. Yes, I said fall! It's right around the corner and now is the time to prepare.

This morning I'm going to share a muffin recipe that I found on the box of my Kodiak Cakes pancake mix and I have to say these muffins are delicious and pretty healthy too! It is so important to me that Sophia eats whole and healthy foods so this really impressed me. This is what I call a "three-for" deal... Pancakes? Muffins? Healthy? Same box? .... SOLD
This recipe saved me a huge trip to the store this past Saturday morning when it was pouring rain, Sophia insisted that she "bakes" muffins for breakfast. I was going to make our traditional Saturday pancake breakfast until I realized there was a muffin recipe right on the box. I had all the extra ingredients in my house and Sophia got to bake her heart out! These muffins would make the morning hustle and bustle of getting the kids off to school and yourself off to work a whole lot easier too!
The recipe posted below is directly from the box.
Makes 12 muffins
2 c. of Power Cakes mix
1 c. Milk
1/2 c. brown sugar
1/4 c. softened butter (not melted)
2 ripe bananas, mashed
1 teaspoon cinnamon
Optional: I cup of dark chocolate chips or chopped walnuts (I used pecans in half my batch)
Combine all ingredients in mixing bowl and blend until smooth. Fill greased muffin cups 3/4 full. Bake at 350º F for 14-18 minutes or until golden brown and inserted toothpick comes out slightly moist.
I promise you these muffins will be out of sight as soon as you take the out of the oven.
