Hey guys, it's finally Friday. I'm heading out shortly to a wedding so like every post on Friday, it's going to be short and sweet.
Today I'm going to share with you a really simple Pinã Colada recipe. Like I mentioned in my last post, we are on vacation so I was limited as far as drink-making gadgets go. Typically I'd mix this particular drink in a blender and serve this frozen however, our beach house does not have one so I made it over ice instead. It was still super delicious!
(Makes 4 drinks)
6 ounces Rum
1 can Coco Lōpez
12 ounces Pineapple juice
Maraschino Cherries (for garnish)
Orange or Pineapple slices (for garnish)
Boil pot of water with 1 can of Coco Lõpez (this brings coconut to a liquid consistency). Fill large pitcher with ice. Add liquid Coco Lõpez and 12 oz. of Pineapple juice. Stir until mixture is white and chilled. (If you have a blender, blend until you get a smooth and frozen consistency) Add rum to mixture. Fill glasses with ice (if you're not blending) and pour mixture over ice. Garnish with pineapple or orange slice and add a cherry. Don't forget to cheers to the weekend!
On a more serious note, I don't want to leave without acknowledging Hurricane Irma. We have been asked to evacuate our home in Charleston, SC along with many others. Fortunately, we are on vacation in the Northeast. We will take this extended time to spend with our close family and friends.
