I'm so happy it's Friday and I'm sure you are too! We're also heading into a three day weekend! I love holiday weekends, they're my favorite! I'm so excited to spend this weekend with Sophia and my family. My father-in-law just arrived in town so I have so many Fall and Halloween activities planned that I hope I can fit them all in.
Tonight, I'm sharing a Plum Prosecco with a Thyme Simple Syrup! To be honest, I think this would be a great brunch drink but it wouldn't be Friday if I didn't share a drink, so here it goes!
2 Black Plums
Handful of Thyme
Prosecco of your choice
1/2 C. Sugar
1/2 C. Water
First bring water to a boil. Pour 1/2 C. Sugar into a measuring cup along with 1/2 C. boiled water. Add handful of thyme and stir well. Let cool down. To get the best flavor out the thyme, let it sit over night. Slice plums. Add ice into stemless wine glass. Add sliced plums. Pour 1.5 ounces of Thyme simple syrup. Top with Prosecco. Add extra Thyme for garnish.
