TGIF || Vanilla Mint Lemonade

Happy Friday everyone!

Unfortunately, I was unable to post a drink last Friday evening due to the the snow storm we had. We were unable to leave the house for about fives day! This kind of crazy weather never happens in Charleston but it was a great little break to spend with my family. I took full advantage of those day and got to lay around, watch movies and just enjoy the company of Matt and Sophia. It was so nice and I'm so glad we got a little taste of winter here in the South.

Since it’s the new year I want to use more fresh ingredients for my cocktails and more drinks that don't necessarily need alcohol in them. So tonight I made a really fun lemonade with vanilla, mint, and rosemary. It's really refreshing! For those of you who are sticking to your New Year resolutions and may be watching your alcohol intake, simply skip the vodka and this tastes just as good without it! (I'll be skipping the alcohol too)


Makes 4 servings of lemonade

Alcohol servings (2)

3 oz. Vanilla Vodka (1.5 oz per drink)

3 fresh lemons (Two cut in halves, one thinly slice)

3 cups of cold water

1/3 cup of Granulated Sugar

Rosemary Sprigs

5-7 leaves of fresh mint

1/2 vanilla bean (scraped) or 1 Tsp vanilla extract



On stove top bring 3 cups of water to medium heat. Add 1/3 sugar and whisk or stir until dissolved. Add 1 Tsp of Vanilla extract (or fresh vanilla bean) to mixture. With a hand juicer add the juice of two lemons to mixture and let simmer. Top with sliced lemons, rosemary and mint. Turn heat to a lower heat. After 10 minutes remove from heat and strain into a glass pitcher. Let lemonade cool for 45 minutes to an hour. Add ice and freshly sliced lemon to ball jars. Pour mixture over ice and garnish with fresh rosemary!

*If you’d like to add alcohol, pour 1.5 oz. of vanilla vodka into each glass, then pour mixture over top! Stir well and enjoy!
