I wanted to let you know I didn’t forget about you last Friday night or this week. I went on a last minute trip to Alaska and was very limited to internet/ computer access. I’ll post a ton of pictures from my trip this weekend! I am back now and made sure to create a really great drink to make up for our lost time.
Like I said in my last TGIF post- since it is a new year I wanted to incorporate more fresh ingredients into my cocktails and make drinks that have an option to add alcohol or taste just as delicious without. If you love Piña Coladas, you’re absolutely going to love tonight’s drink (Alcohol-optional)!
3 fresh Red Grapefruit
Coco López Cream of Coconut (my personal fave)
2 Tbsp of Wholesome Blue Agave Nector (another personal favorite)
Grapefruit slices (for garnish)
1 ounce of white rum (optional)
Remove paper from can of Coco López and place in small pot with water. On medium heat bring water to a simmer. Remove can and lid and stir Cream of Coconut until it’s a fine consistency. Pour about 6oz. into glass pitcher. Hand juice 4 fresh grapefruit into glass pitcher on top of Cream of Coconut. Add 2 Tbsp of Agave Necter. Stir thoroughly until mixture turns to a blush color. In glass add ice and pour mixture over. Add 1 ounce of white rum if desired. Add sliced grapfruit for garnish and a pretty straw!
