Motivation Monday || Pomegranate and Candied Pecan Salad
Happy Monday everyone!
Considering it’s Monday, I thought it would be a great idea to post a healthy recipe to keep everyone motivated for the week ahead. My health and physical wellness has always been one of my top priorities. I actually workout a lot, however I often find that because I workout so much, I feel like I can justify sweets and junk foods. This year I made a goal to be really conscious about what I’m consuming and not over-doing the “cheat meals.” I’m a true believer of eating things in moderation. Now that I’ve found a really great balance over the past three months I’ve had little-to-no sweet cravings. I have a little bit of dark chocolate right after dinner and that’s satifying enough.
Today, I’m sharing my new favorite salad with you. It’s super delicious and has a lot of fun ingredients that mesh well together. I made so much that I have extra for lunch tomorrow too. If you’d like to see more recipes like this, just tap the heart at the bottom of the page!

Recipe:
Organic Baby Lettuce Mix
Organic Baby Spinach
Grilled Chicken
Baked Sweet Potatoes
Organic Pomegranate Seeds
Goat Cheese Crumbles
Candied Pecans (I bought pre-candied Pecans from Trader Joe’s)
Homemade Balsamic Vinegarette (I included my recipe below)
Directions:
Dice sweet potato into cubes. Season lightly with salt, pepper and olive oil. Bake in oven at 400° for 40 minutes. Grill Chicken seasoned with your preference (I season with light salt, pepper, garlic powder and dried basil). When the chicken is finished cut strips to your liking.
Place baby spinach and baby lettuce in a salad dish. Add grilled chicken, sweet potatoes, candied walnuts, pomegranate seeds and goat cheese. Add your preference of dressing and enjoy!
Homemade Balsamic Vinaigrette:
2 Tbsp of Balsamic Viniagar
2 Tbsp of Olive Oil
1 Tsp of Grey Poupon Mustard
Dash of white sugar
Directions:
Pour all ingredients into a mixing glass and stir thoroughly until all mixed together. Pour your desired amount over your salad.
